Broccoli Salad with Bacon and Cranberries

This easy Broccoli Salad with Bacon and Cranberries gets lots of flavor from a little bit of bacon, cranberries and almonds.  Low in calories and delicious!

Ingredients

  • 1/4 cup red onion finely chopped
  • 1/3 cup mayonnaise canola oil
  • 3 tablespoons Greek Yogurt 2% reduced fat
  • 1 tablespoon cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 cups broccoli florets coarsely chopped
  • 1/3 cup almonds slivered, toasted
  • 1/3 cup dried cranberries reduced-sugar
  • 4 slices bacon center cut, cooked and crumbled

Instructions

  • Soak the red onion in cold water for 5 minutes and then drain. 
  • In a large bowl, combine the mayo, yogurt, vinegar, honey, salt and pepper.  Whisk until smooth.  
  • Stir in the broccoli, almonds, cranberries and bacon. 
  • Cover and chill for one hour before serving.
