Snow Pea and Carrot Slaw

Crisp snow peas, gorgeous orange carrots all in a toasted sesame oil and rice vinegar dressing! It's the perfect Asian inspired side dish!

Ingredients

  • 2 cups snow peas thinly sliced, vertically
  • 1 cup carrots shredded
  • ¼ cup red onions thinly sliced
  • ¼ teaspoon kosher salt
  • 2 tablespoons rice vinegar
  • 2 teaspoons sesame oil
  • 2 teaspoons soy sauce
  • 1 tablespoon sesame seeds toasted

Instructions

  • Thinly slice the onions.
  • Whisk together the vinegar, sesame oil and soy sauce in a medium bowl. Add the sliced onions.
  • While the onions are marinated, shred the carrots and thinly slice the snow peas.
  • Add the carrots, snow peas and salt to the onions and toss to combine.
  • Serve topped with the sesame seeds.

Notes

Can substitute snap peas or even green beans for the snow peas.
