Crisp snow peas, gorgeous orange carrots all in a toasted sesame oil and rice vinegar dressing! It's the perfect Asian inspired side dish!

Ingredients

snow peas
thinly sliced, vertically

carrots
shredded

red onions
thinly sliced

teaspoon
kosher salt

tablespoons
rice vinegar

teaspoons
sesame oil

teaspoons
soy sauce

tablespoon
sesame seeds
toasted
Instructions
Thinly slice the onions.
Whisk together the vinegar, sesame oil and soy sauce in a medium bowl. Add the sliced onions.
While the onions are marinated, shred the carrots and thinly slice the snow peas.
Add the carrots, snow peas and salt to the onions and toss to combine.
Serve topped with the sesame seeds.
Notes
Can substitute snap peas or even green beans for the snow peas.
