Chicken Waldorf Salad

This salad comes together in minutes using leftover cooked brown rice and rotisserie chicken.  Makes a great lunch salad or an easy, light dinner.

  • 4 cups brown rice cookded
  • 2 apples cored and diced
  • 3 stalks celery sliced
  • 3 cups breast meat from a rotisserie chicken, diced
  • ½ cup walnuts toasted
  • 2 ½ tablespoons extra virgin olive oil
  • 2 ½ tablespoons lemon juice
  • salt and pepper


  • Combine the rice, apples, celery, chicken, and walnuts in a large bowl. Place the lemon juice and olive oil in a lidded jar and shake to emulsify. Pour over the salad, season with salt and pepper and toss to coat evenly.
