Ingredients

  • 4 chicken legs
  • 4 chicken thighs
  • 1 onion cut into 1 inch wedges
  • 3 sweet potatoes medium, peeled and cut into 1 inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 tablespoons maple syrup
  • 6 sprigs fresh thyme

Instructions

  • Preheat oven to 400.
  • Line a baking sheet with parchment paper, if desired.  
  • Place chicken, sweet potatoes, and onions on baking sheet.  Drizzle with olive oil and salt and pepper and toss to combine.  
  • Drizzle with the maple syrup and top with the thyme sprigs. 
  • Roast for 30-35 minutes or until chicken is cooked to 165 degrees, stirring once halfway through. 

Notes

This recipe calls for 4 legs and 4 thighs.  You can use all legs or all thighs.
