Piña Colada Popsicles

These boozy popsicles are amazing! Creamy and lush with pineapple, coconut milk and rum!

  • 1 cup pineapple heaping cup, chopped
  • 3/4 cup coconut milk canned
  • 1/4 cup coconut rum
  • 2 tablespoons sugar or honey


  • Place all the ingredients in a blender and process until smooth.
  • Pour into 8 ice cream pop molds, leaving a little space at the top.
  • Freeze for at least 8 hours.
  • Run the mold under warm water for a few seconds to unmold.


If you want to use wooden sticks instead of the plastic sticks, freezer your popsicles in their molds for about 2 hours, then insert the sticks - they should stand up on their own.
