Gin Mojito

This refreshing riff on a mojito features gin and sherry! You'll love how refreshing it is and it's a lower alcohol content - perfect for summer

Ingredients

  • 1 ½ ounce fino sherry
  • ½ ounce gin
  • ½ ounce lime juice fresh
  • ½ ounce lemon juice fresh
  • ½ ounce simple syrup
  • 1 ounce sparkling water
  • 2 mint leaves more for garnish
  • lemon and lime wheels for garnish

Instructions

  • Combine the sherry, gin, lemon juice, lime juice, simple syrup and ice in a cocktail shaker.
  • Shake for 15-20 seconds and then strain into a cocktail glass filled with ice.
  • Top with the sparkling water and garnish with the extra mint and lemon and lime wheels.

Notes

Use fresh lemon and lime juice - not bottled. 
Fino sherry is a lighter and dryer sherry - do not use cooking sherry. 
To make simple syrup combine equal parts water and sugar in a sauce pan and heat, stirring until sugar dissolves.  Cool and then store in the fridge, it should last about a month.
