Instant Pot Quinoa Pilaf
A quick, easy and healthy side dish! So versatile, goes with everything!
- 1 cup quinoa rinsed
- 1 cup water or broth
- 1 onion diced
- 8 oz mushrooms thinly sliced
- 1 clove garlic minced
- salt and pepper to taste
Turn Instant Pot to sauté function and add the olive oil.
Sauté the onions until softened about 2 minutes.
Add the mushrooms and sauté until they release their liquid - about 3 to 4 minutes.
Add the garlic and sauté for about a minute or until fragrant.
Add the quinoa and stir to coat and season with salt and pepper. Add the water and stir.
Lock the lid in place and set the vent to sealing. Press off to turn off sauté and then press manual and set the time for 1 minutes.
After the timer goes off, let the pressure release naturally for 10 minutes. Then move the vent to venting and let the pressure release. Unlock the lid, stir and adjust seasoning.
You can use stock in place of the water. I sometimes use chicken, beef or seafood stock depending on what I am serving this with.
Can also use nuts or dried fruits.
