Turn a fun derby day cocktail into a fruity treat with blackberries!!

6blackberries4 to muddle, 2 to garnish
6mint leavesplus more for garnish
Muddle blackberries and simple syrup in a mixing glass.
Strain into cocktail glass. Add mint leaves and muddle the leaves with the blackberry syrup.
Add crushed ice. Pour in the bourbon. Stir for 30 seconds to chill.
Add more ice and garnish with a mint sprig.
Simple syrup - measure equal parts water and sugar in a small saucepan (I usually do ½ cup sugar and ½ cup water.) Heat over medium low heat, stirring until sugar dissolves. Will keep bottled in the fridge for up to a month.
