Salmon with Spicy Mango Salsa

A spicy, fruity salsa tops simple seared salmon in this easy recipe that is ready in about 20 minutes!

Ingredients

  • 2 mangoes peeled and diced
  • 1/2 cup cilantro fresh, chopped
  • 1/2 cup red onion diced
  • 1 clove garlic minced
  • 2 tbsp lime juice fresh
  • 2 serrano chilies finely diced (seeded or not)
  • 2 teaspoons lime zest
  • 1 tbsp extra virgin olive oil
  • 4 salmon filets about 6 ounces each

Instructions

  • Combine the mango, cilantro, red onions, garlic, lime juice, peppers, and lime zest in a bowl and stir to combine.
  • Heat the olive oil in a skillet over medium high heat.
  • Sprinkle the salmon with salt and pepper and place in the skillet flesh side down. Cook without disturbing for 3 minutes.
  • Turn the salmon and cook for an additional 2-3 minutes or until done to your liking.
  • Serve the salmon with the salsa.
