Insalata Caprese (Tomato, Basil and Mozzarella Salad)
This is the easiest summer salad and tastes like summer on a plate!
- 4 Tomatoes
- 15 Basil leaves
- 8 ounces Fresh mozzarella
- 3 tbsp olive oil
- salt and pepper
Thinly slice tomatoes and mozzarella cheese.
Arrange the tomatoes in a tart pan.
Wedge in the mozzarella cheese and a basil leaf between the tomatoes.
Drizzle with the olive oil.
Sprinkle with salt and pepper.
Let rest for 10 minutes.
You can arrange everything in a scallop pattern like I did, or you can just chop the tomatoes and mozzarella and sprinkle over torn basil leaves.
You can even stack them in little towers by placing a tomato slice on the plate, top with a slice of mozzarella, a basil leaf and then drizzle with olive oil and sprinkle with salt and pepper.
