Pina Colada Sherbet

With only 5 ingredients, this sherbet is a dream come true! Rich and creamy with just enough rum to make it the perfect grown up dessert! You can omit the rum though if you want to serve it to all ages!

Equipment

  • Ice Cream Maker
  • Vitamix
  • Ice Cream Bowls

Ingredients

  • 4 cups pineapple cut into chunks
  • 1 cup sugar
  • 1 cup coconut milk
  • 2 tbsp rum optional
  • 1 teaspoon lime juice

Instructions

  • Place all the ingredients in the order suggested by your blender.
  • Process until smooth.
  • Chill thoroughly.
  • Process per the instructions with your ice cream maker.

Notes

Fresh pineapple is best, but you can use canned.  
Rum - if you don't want to use rum, you can use pineapple juice or a 1 teaspoon of vanilla extract.
