Pansy Simple Syrup

Use edible pansies to make this light and floral simple syrup! It's perfect for cocktails, delightful drizzled on desserts and makes impressive mocktails!

  • Food Processor
  • Mesh strainer
  • Funnel
  • Flip top bottle


  • 1 cup sugar
  • 1 cup pansy flower petals
  • 1 cup water


  • Tear the floral petals off of the stem and the base of the flower. Add the petals and the sugar into the bowl of food processor and pulse until combined.
  • Heat the sugar/petal mixture with a cup of water over medium high heat. Stir until the sugar is dissolved.
  • Strain through a fine mesh strainer and let cool to room temperature.
  • Store in a lidded bottle in the fridge.



This should keep for about a month in the fridge.
How to use pansy simple syrup:
  • Drizzle on poundcake, custards or yogurt.
  • Cocktails - like a Pansy Martini.
  • Drizzle on fruit salad.
  • Mocktails
