Spray or brush the slices of bread with oil. Place in a grill pan or skillet and medium high heat and cook until toasted. Flipping to toast both sides.
Place toasted bread on a platter and rub one side with the cut garlic.
Layer the thinly sliced tomato on the bread. Drizzle with a little of the olive oil, sprinkle with salt, and shake a bit of the red wine vinegar on top.
Top with the olives and the capers.

Bread - sourdough, peasant loaves, baguettes, all work.Olives - kalamata or your favorite olives. Tomatoes - heirlooms or vine-ripened for best flavor.
