Insalata Caprese (Tomato, Basil and Mozzarella Salad)

This is the easiest summer salad and tastes like summer on a plate!

Ingredients

  • 4 Tomatoes
  • 15 Basil leaves
  • 8 ounces Fresh mozzarella
  • 3 tbsp olive oil
  • salt and pepper

Instructions

  • Thinly slice tomatoes and mozzarella cheese.
  • Arrange the tomatoes in a tart pan.
  • Wedge in the mozzarella cheese and a basil leaf between the tomatoes.
  • Drizzle with the olive oil.
  • Sprinkle with salt and pepper.
  • Let rest for 10 minutes.

You can arrange everything in a scallop pattern like I did, or you can just chop the tomatoes and mozzarella and sprinkle over torn basil leaves. 
You can even stack them in little towers by placing a tomato slice on the plate, top with a slice of mozzarella, a basil leaf and then drizzle with olive oil and sprinkle with salt and pepper.
