Arugula Salad with Grapes and Sunflower Seeds

The bitterness of the arugula pairs beautifully with the sweet grapes, the sweet vinaigrette and the toasted sunflower seeds.

Ingredients

Vinaigrette

Salad

  • 7 cups baby arugula loosely packed
  • 2 cups red grapes halved
  • 2 tablespoon sunflower seeds toasted
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • In a large bowl, combine the arugula, sunflower seeds and grapes. Drizzle with the vinaigrette and sprinkle with salt and pepper. Toss to combine.

Notes

This salad is very easy to change up!
Use your favorite lettuce or dandelion greens. 
Pears, strawberries, apples, berries will all work in place of the grapes.
Instead of sunflower seeds, try pumpkin seeds, walnuts, or pecans.
