Blueberry Almond Smoothie

This blueberry almond smoothie is creamy and bursting with blueberries!  No refined sugar and almond milk make it vegan, Whole30 and paleo!

Equipment

Ingredients

  • ½ cup almonds
  • 4 dates
  • 2 cups blueberries fresh or frozen
  • 2 cups almond milk unsweetened
  • 1 cup ice cubes
  • chia seeds to serve optional

Instructions

  • Place almonds and dates in a small bowl and cover with boiling water.  Let sit for 5 minutes. 
  • In a blender add the almond milk, drained almonds and dates, blueberries and ice cubes. 
  • Process until desired smoothness. 

Notes

Fresh or frozen blueberries will work.  If using frozen, omit the ice cubes. 
If using sweetened almond milk, omit the dates if you don't want it overly sweet. 
In place of dates, you can use a tablespoon of maple syrup or honey.
