- 4 inch ginger root peeled and coarsely chopped
- ½ cup sugar
- 1 ½ cups water
Place all the ingredients in a small saucepan. Heat to a boil over medium high heat, stirring to dissolve the sugar.
Lower the heat and let it simmer for 20 minutes.
Remove from heat, let cool to room temperature, strain into a jar and refrigerate.
