Green Beans Gremolata
Takes simply steamed green beans to a whole new level with a fresh parsley, lemon and garlic gremolata. Toasted almonds on the top are the delicious finishing touch!

1 pound green beans trimmed 2 tbsp flat-leaf parsley chopped 1 tbsp almonds sliced, toasted ¼ teaspoon lemon zest 1 ½ teaspoons lemon juice fresh squeezed 1 teaspoon extra virgin olive oil 1 clove garlic minced salt and pepper to taste
Steam the green beans, covered, until crisp tender. About 5-7 minutes.
Place the green beans in a bowl and toss with the olive oil, parsley, lemon juice and zest and garlic. Taste and add salt and pepper.
Place the green beans on a platter or in a serving bowl and sprinkle with the toasted almonds.
Zest the lemon before juicing!
Toast the almonds in a dry skillet over medium heat. Watch them carefully, the go from perfect to burnt in a flash.
