Place rub ingredients in a small bowl and stir to combine. Transfer to a jar with a tight fitting lid. (It will make about a cup). Store away from heat and light for up to a month.
Preheat grill to medium-high. Remove the pork chops from the fridge about 30 minutes before you are ready to grill them. Rub both sides with olive oil and then with the spice rub.
Make a cool zone in your grill either by turning off one of the burners or banking the coals. Place the chops over the hot part of the grill and sear on each side for about 3 minutes. Move the chops to the cooler part of the grill and let them finish cooking about 10 more minutes.
Remove the chops from the grill and let them rest for 5 minutes.

Note - the rub makes a lot more than is used for just the 4 pork chops. Because of this, some of the counts are off - like the sodium.
