Using a channel knife or vegetable peeler, create as long of a lemon twist as you can.
Drape the twist around the glass and hang over the edge and fill the glass with ice.
Pour the bourbon into the glass and top with ginger beer.
Add the dash of bitters and stir.

A channel knife will give you a long thin twist, a vegetable peeler will give you a wider flat peel. Using the freshest lemon you have works best, older lemons have tougher skin. Serve this without the bourbon for an easy mocktail.
