Mango Chicken Lettuce Wraps
Light, healthy and delicious! Mangoes, chicken, cucumbers, rice, cilantro and green onions in a lettuce wrap with a garlicky, ginger dressing! The perfect light dinner or lunch!

Dressing. ½ cup rice vinegar ½ cup vegetable oil 6 tablespoons mayonnaise ¼ cup soy sauce ¼ cup ginger finely chopped 2 cloves garlic minced ½ teaspoon toasted sesame oil Wraps. 3 cups rice cooked 2 cups chicken cooked, shredded 2 heads bibb lettuce leaves separated 1 cup cucumber seeded, cut into matchsticks 3 green onions cut into 3 inch pieces 1 mango peeled, cut into matchsticks ½ cup fresh cilantro chopped
Whisk together dressing ingredients in a bowl or add everything to a mason jar and shake to combine. Add salt and pepper to taste.
Place all ingredients on a platter and let guests make their own wraps.
Can use regular tortillas or other types of wraps.
For a spicier option, offer sliced jalapeños.
