Oat Bran Blueberry Crumble

Ingredients

  • 2 cups oat bran
  • ¾ cups LSA
  • 12 dates pitted
  • 2 tsp vanilla extract
  • 3 ⅓ cups blueberries
  • 2 tablespoons raw sugar
  • 2 tablespoons white chia seeds
  • ½ cup coconut oil melted

Instructions

  • Preheat the oven to 325.  In a food processor, combine the oat bran, LSA, dates, oil and vanilla.  Process for 3-4 minutes or until the mixture comes together.  Reserve 1 cup of the mixture. 
  • Lightly grease a 9x13 baking pan and line with parchment paper.  Using the back of a spoon, press the rest of the oat bran mixture into the bottom of the pan, forming the bottom layer of your crumble.  Bake for 18-20 minutes or until just golden. 
  • While that is baking, combine the blueberries and sugar in a medium saucepan over medium heat.  Cook for about 4 minutes, stirring, until the blueberries start breaking down.  Add the chia seeds and cook for 10 more minutes, stirring occasionally.  
  • Remove the base from the oven and spoon over the blueberry jam.  Crumble over the top the reserved 1 cup of the oat bran mixture.  Bake in the oven for 20 minutes or until golden.  
  • Place in the refrigerator to cool completely before cutting into 15 squares.  You can serve with yogurt if you'd like. 

Notes

LSA is a mixture of ground flax seeds, sunflower seeds and almonds. If you can't find it, you can make your own with a food processor.
