Place the almonds in a dry skillet and toast them over medium high heat until they start turning golden. Remove from heat and place in a small bowl.
In a large bowl, whisk together the olive oil, lemon juice and Dijon mustard.
Core the apples and cut them into thin bite sized slices and add to the dressing mixture. Toss to coat.
Flake the salmon and add it to the bowl along with the almonds, spinach, and raisins. Toss to coat. Taste and adjust seasoning.
Notes
Instead of almonds you could use pecans or walnuts. Smoked trout, smoked mackerel, and smoked chicken would also work. You can try other dried fruits - cranberries would be nice. To save calories you can reduce the amount of oil.
