Wash and slice the strawberries and place them in a clean quart jar.
In a small saucepan, heat the vinegar just to the boiling point over medium heat.
Pour the hot vinegar over the strawberries. Add the sugar and stir to dissolve.
Let it come to room temperature before placing the lid on the jar.
Store in a cool, dark place (like a pantry or basement) for several days (around 3-5 days.)
When the flavor is to your liking, strain and pour the vinegar into a bottle.

Notes
The flavor of this vinegar will start to fade after about 6-8 months, but ours never lasts that long! Vinegar - do not use regular white vinegar - it is too harsh. Use rice wine vinegar or white wine vinegar. You can use apple cider vinegar, but your color won't be as pretty and the flavor of the strawberries won't be as clean.
