Thai Chicken Noodle Bowl

Ingredients

  • 2 cups cooked chicken shredded
  • 8 oz noodles pasta of your choice
  • ½ cup lime juice fresh squeezed
  • 1 tbsp fish sauce
  • 1 tbsp peanut oil or any neutral oil
  • 1 ½ tbsp sugar
  • 8 oz cherry tomatoes halved
  • ½ small red onion thinly sliced
  • 1 cucumber preferably Persian, thinly sliced
  • 1 red chile pepper seeded and thinly sliced
  • ½ cup cilantro leaves chopped
  • cup roasted peanuts coarsely chopped

Instructions

  • Cook pasta according to directions, drain and rinse.
  • While pasta is cooking, combine lime juice, fish sauce, oil, and sugar in a large bowl. Add the sliced onions and the pepper to the dressing to soak while you prepare the rest of the vegetables.
  • Combine the noodles, chicken, tomatoes, cucumber, and cilantro with the dressing and toss to combine.
  • Top with the peanuts for serving.

Notes

I like to add the onions and the pepper to the dressing to quick pickle the onions and to evenly distribute the heat from the pepper.
