Thai Pork and Green Beans
This easy stir fry of ground pork and green beans is sweet and spicy and ready in minutes!

- 1 pound green beans cut into 1 inch pieces
- 3 tablespoons peanut oil or other high heat oil
- 1 tablespoon red curry paste
- 1 pound ground pork
- ⅓ cup chicken stock
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
Heat oil in a wok over medium-high to high heat.
Stir fry green beans for about 3-5 minutes or until charred. Remove and place in a bowl.
Add the pork to the wok and cook, breaking up the pieces, until cooked through about 3-5 minutes.
Add the curry paste and stir to coat the pork and cook for another minute or two.
Combine the stock, fish sauce and sugar in a bowl and stir to dissolve the sugar.
Add the green beans and stock mixture to the pork and cook for about 2 more minutes to thicken the sauce and bit and combine the flavors.
Serve over rice.
If you like your food spicier use more curry paste, if you want less heat, use less.
