Arugula Salad with Balsamic Strawberries and Goat Cheese
Bitter arugula, sweet strawberries and tangy goat cheese in the perfect spring salad!

Place the strawberries and balsamic vinegar in a large bowl. Do a few grinds of fresh black pepper. Toss and let sit for 10 minutes.
Add the arugula to the bowl and sprinkle with a pinch of salt. Toss to combine and then drizzle with olive oil and toss gently again.
Plate the salad and the crumble the goat cheese on top.
Can substitute peaches for the strawberries.
Use other bitter greens such as dandelion or make it milder with baby spinach.
