Arugula Salad with Pears and Prosciutto

- 10 ounces arugula
- 2 pears cored, cut lengthwise into ¼ inch slices
- 2 ounces prosciutto cut into thin strips
- ¾ cup Parmesan cheese fresh grated or shaved
- 4 tablespoons walnut halves toasted
- 3 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Combine the arugula, pears, prosciutto, Parmesan cheese and walnuts in a large bowl.
In a small bowl, whisk together the vinegar, olive oil, salt and pepper.
Drizzle the salad over the dressing and toss it gently.
Almonds are also a good substitute for the walnuts.
If you want your prosciutto crispy, you can brown it before adding it to the salad.
