Baked Chicken and Chorizo

Chicken, chorizo, olives and lemons roast together in one pan creating an amazing flavor!

Equipment

Ingredients

  • 1 whole chicken cut up or combination of pieces about 8
  • 1 lemon sliced
  • 1 cup pitted black olives
  • 2 chorizo sliced
  • 4 cloves garlic unpeeled
  • 1 cup chicken stock
  • 4 tablespoons butter
  • ½ teaspoon smoked paprika
  • sea salt and fresh ground black pepper

Instructions

  • Preheat the oven to 400 f. 
  • Place the chicken, lemon, black olives, chorizo, and garlic into the roasting pan.
  • Pour over the stock and the butter. Sprinkle with the paprika and salt and pepper.  Roast for 40-60 minutes.

Notes

Since you are using the lemon peel, organic lemons are suggested.
Chorizo - this recipe uses Spanish chorizo, which is a cured sausage, not Mexican which is a fresh sausage. 
Kalamata olives will have more flavor than regular canned black olives.
