Creamy Parmesan Rice
This creamy, buttery Parmesan rice is a classic side dish that goes with everything!

- 3 tbsp butter
- ¼ cup shallots (or onion) finely chopped
- ½ teaspoon garlic finely minced
- 1 cup rice
- 1 ½ cups chicken broth preferably low sodium
- 2 tbsp Parmesan cheese grated
- salt and pepper to taste
Heat 2 tablespoons of the butter in a saucepan over medium high heat and add the shallots and garlic. Cook until softened about 2 minutes.
Add the rice and stir to coat with the butter. Add the broth and salt and pepper to taste.
Bring to a boil and cover. Reduce the heat to low and simmer for 20 minutes.
Stir in the remaining butter and the Parmesan cheese. Taste and adjust the seasonings.
Shallots - can substitute regular onions.
Parmesan Cheese - Pecorino will also work. Try any hard grated cheese.
