Honey Orange Roasted Carrots
So easy and so delicious! Just a few ingredients and about 30 minutes are all you need to make these sweet and tangy carrots.

Ingredients

lb
carrots
peeled and cut into 2 inch chunks
1
orange
sliced
2
tbsp
extra virgin olive oil
2
tbs[
honey
6
sprigs
fresh thyme
or 1 teaspoon dried
2
cloves
garlic
peeled and lightly crushed
Salt and pepper
Instructions
Preheat oven to 450.
Line a baking sheet with parchment paper.
Place carrots, garlic and thyme on baking sheet and drizzle with olive oil and honey. Sprinkle with salt and pepper and toss to combine.
Nestle in the orange slices.
Baked for 20-25 minutes or until golden and tender.

Can use rainbow carrots. If using baby carrots, leave them whole.
