Grease bottom of small roasting pan with butter. Cut remaining butter up into little bits. Place pears cut side down into dish and dot with the remaining butter. Drizzle a little of the honey over each pear. Pour the wine in the dish.
Add the vanilla bean or stir in the vanilla extract.
Roast for about 30 minutes and then baste with the juice. Continue roasting for another 30 minutes.
Serve with ice cream or cream.

Notes
You can use brown sugar instead of honey for a deeper flavor and color. Flip the pears at the halfway point if you want a deeper color and caramelization on them.You can use a any sweeter white wine if you don't have a dessert wine or even white grape juice.
