Roasted Red Pepper Dip

Made with mostly pantry ingredients like roasted red bell pepper and canned white beans, this is an easy appetizer that you can whip up any time!

Ingredients

  • ¼ cup fresh basil
  • 2 teaspoons lemon juice fresh squeezed, optional
  • 16 oz canned cannellini beans drained and rinsed
  • 7 oz roasted red bell peppers jar, drained and rinsed
  • 1 garlic clove
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Combine basil, lemon juice, beans, peppers and garlic in a food processor. Pulse until smooth.
  • With motor running, slowly add the olive oil until smooth. Stir in salt and pepper and taste. Adjust seasonings if needed.

Notes

The lemon juice is optional, but it does brighten the flavor. 
This also makes a great pizza sauce! 
Thin it with a little pasta water and toss with pasta!
