In a medium bowl, toss the potatoes with the olive oil and the salt.
Line a baking sheet with parchment paper and spread the potatoes in a single layer.
Roast for 30 to 35 minutes.
Sprinkle the Parmesan cheese and then the parsley.

Russet potatoes are best because they are high in starch and their long length makes them great for fries. Parsley - flat leaf or curly.Parmesan cheese - freshly grated is best!
