Fiamma Pizza Company Chattanooga TN
I have been wanting to eat at Fiamma Pizza Company ever since they opened. I love pizza. I adore pizza. I could eat pizza every day for the rest of my life and be happy. Truth be told, I am not that picky about my pizza. It's like donuts, even a not so good donut is better than no donut at all. I feel the same way about pizza. However, when I find a pizza I love, it's like I hear angels singing. Well, angels were singing at Fiamma Pizza Company.
We walked in around on five on a Saturday. I know it's early, but we're old and that's what old people do. You walk in and to your left is the menu. You place your order at the counter, get a number to place on your table, get your drink and sit down to wait for your order. Since I love a thin crust we went with Salsiccia + Peppe from their Pizzas Napoleiana. It had tomato sauce, sausage, carmelized onions, peepadew peppers, bufala, basil and olive oil. We also both ordered a side spinach salad which had spinach, red onion, feta, pancetta, and a balsamic vinaigrette on the side.
The decor is simple with tables scattered about with a polished concrete floor. There is a bar on the other side, but I forget to go check it out.
The spinach salad arrived quickly. The spinach was fresh, the feta was crumbled nicely and the pancetta was amazing. The balsamic vinaigrette was also tasty. It was altogether an excellent salad.
As we waited for our pizza, I admired the oven. It is a gorgeous wood burning oven, from Naples! It promised good things to come.
Then the star of the show arrived, the pizza. I first admired all those lovely charred bits on the crust! This is the kind of pizza I dream of. The toppings were perfectly balanced, all of the flavors blended perfectly together. The crust was thin, but still flavorful.
The peppadew peppers were amazing. Sweet with a little heat. I immediately googled them on my phone to find out where I could get some. The tomato sauce tasted so fresh, probably one of the best tomato sauces on a pizza that I've ever had. The bufala was nice and chewy, the sausage even spiced and the onions sweet.
Yep, angels singing. We will be be back. I think everyone needs goals in life and mine is to try all of their pizzas.
