Kiwi Envy - a bright green gin cocktail, garnished with a kiwi slice

    Kiwi Envy  Fruity Gin Cocktails

When my local grocery store had some organic kiwi on sale, I grabbed a bag.  I was planning on freezing slices for smoothies, but then decided to do a search on kiwi cocktails.  I found Kiwi Envy at Aviation Gin.  Since I’ve already discussed the state of my liquor cabinets (as in, I have too much liquor!!), it should come as no surprise to anyone that I had everything I needed to make this fruity gin cocktail.

What a lovely cocktail this was!  Really simple and I think I’ll use the technique with other fruits.  You simply muddle the kiwi, add liquors and simple syrup, shake, strain and serve.   To add even a little more interest to it, instead of plain simple syrup, I used our homemade Ginger Simple Syrup.

Not only does it use gin (my favorite), it also uses elderflower liqueur – my second favorite!!  Of course, it probably will be even better in the summer.  As it was, we sat huddled up on the love seat, dreaming of warmer days ahead!  Some helpful accessories for making this cocktail:  Muddler, Hiball Glasses, Ice Cube Molds.
