I have just started using a sourdough starter this summer and I am already facing the "What to do with the discarded sourdough starter" dilemma. If you are not baking bread every week, but you regularly feed your sourdough starter, you know that you have to discard a certain amount of it and then replace it with flour and water.
While googling "ways to use up your sourdough starter" - I found lots that I am going to try. But one caught my eye immediately. One because it used up an entire cup of starter (I was practically giddy to find one that would use that much) and two - it had only a few ingredients (sugar, starter and baking soda!!!).
What I found was King Arthurs Sourdough Crumpets. I'm not going to retype in the recipe, because I want you to visit the site and see all the comments that are left. I will tell you my findings.
These were good! Do not skip the toasting step though, it's very important and adds that toasty crunchy texture and taste. Now, I have no idea what real crumpets taste like, so I don't know if these are authentic, but they were nice and toasty on the outside and inside they were moist and chewy, but still light. We loved them with jelly.
As for the rings, I only had two of the regular round rings. So, I tried using wide mouth canning rings. These worked great for shaping, but I didn't think about how hot they were so the were kind of difficult to remove. I'm thinking about getting Norpro 994C Silicone Egg Pancake Ring Round, Blue or possibly, Fox Run Set of Four English Muffin Rings What I do know is that with my large griddle pan that I can span over two burners, I'm going to buy enough rings to make two sets of 4 at the same time.
If you have a sourdough starter and are looking for ways to use up some the starter, I encourage you to give these a try.

Since moving to New Zealand, I have discovered many British things and one of them is crumpets. They are, basically, pancakes with lots of bubble holes that are only fried on one side. I like them a lot!

We used to get crumpets when I was a kid - toasted (barely) and then smothered in butter, which dripped down into the holes. mmmm. I may have to get a package.
Nice job on the homemade ones too! I was thinking tuna can for the round, but it was mentioned in the link.
