    Thai Mango Grain Salad

    Thai Mango Grain Salad - a light and refreshing main dish or side dish salad!

    How do you grocery shop?  Are you a stick-to-the-list person?  More of a walk-slowly-up-and-down the aisles type person?  Is your cart filled with everything that grabs your fancy?  I am a stick to the list person.  I make my list on my favorite phone app Grocery iQ .  I love this app because not only does it let me make a list, and check things off, it also allows me to rearrange the aisles in the list.  So, as I walk into the store, the first things on my list are in the produce dept because that's the aisle I moved to the beginning.  Next is frozen foods and so on.  It takes a few minutes at the beginning to get those aisles arranged, but after that, it makes grocery shopping so easy!

    So, as I was saying, I am a list person.  I rarely deviate from my list.  One of the few exceptions is if a favorite fruit or veggie just happens to be on sale, as was the case last week.  Mangoes.  I will deviate from my list for some perfectly ripe, organic mangoes, which Earth Fare had on sale.  So, I brought these home, along with $5.00 rotisserie chicken and plotted what to make for dinner.

    Preparations for Thai Mango Grain Salad

    I was planning on having part of the rotisserie chicken for dinner, so I needed to use the mangoes either for dessert or a side dish.  Not feeling particularly desserty - I settled on a side dish.  This salad was basically created from what I already had in my pantry and fridge and my lovely mangoes.  It is bright and refreshing with the Thai flavors shining through.

    Cut Limes

    I used a multi-grain rice mix that I had in the pantry, but you can use any kind of your favorite cooked grain.  I think farro would be perfect in this, but then again, I think farro would be perfect in everything!

    Thai Mango Grain Salad

    This Thai Mango Grain Salad is the perfect way to use up leftover cooked grains.  Next time you cook grains, make extra for this salad.

    Ingredients

    • 3 cups cooked grains room temperature
    • 1 mango peeled and diced
    • ½ cup sliced almonds toasted
    • 3 cups baby spinach or whatever lettuce you prefer
    • 2 red chili peppers sliced (seeded if you prefer it less hot)
    • ¼ cup fresh cilantro chopped
    • salt and fresh ground black pepper

    Dressing

    • 2 tablespoons lime juice
    • 2 tablespoons fish sauce
    • 1 teaspoon sugar

    Instructions

    • Place the grains, mango, almonds, baby spinach, chili peppers in a bowl. Using a jar with a lid, make the salad dressing by combining the fish sauce, lime juice and sugar. Shake until the sugar has dissolved and pour over the salad ingredients in the bowl. Toss gently to combine. Taste and add salt and pepper as necessary.
    • Serves 2-3 as a main dish salad and 4-6 as a side dish.

      I'm a stick-to-my-list person and I've got to give that App a try, it sounds wonderful and would definitely keep me organized! The flavors in this salad are also wonderful - love the mango addition!

      Locally I am mostly a stick to my list person. But when I "head to the city" (about 45 mins) to go to the major international/organic./EVERYTHING store, I have a list AND I obsessively walk down almost every aisle to make sure nothing strikes my fancy or that I have not forgotten anything. But I only go once a month, and same with Costco where I do similarly, so.....

      Love this salad! I love using mango in savory preparations. I find it too sweet for dessert, but love cooking with it.

      Oh I so need to make this! For one, I adore mango, but second, I think Thai flavored food is just delicious when it's paired with a fruit. When I try this I'll be using quinoa because...well I make quinoa with everything 😉 Thanks for sharing!

      Unless I'm in a hurry, I love to go down each aisle, just so I won't forget anything. One time, Hubs and I went in for tortillas for burritos and came out with everything but those since he skipped that aisle--sigh.       I'm with you, I have to shop with a list. If I don't, I come home with bags of food that will go uneaten - especially if I shopped when I was hungry!
      I do love it though when I can find a sale and make a special treat. This looks so fresh and flavorful. Don't you love it when a dish comes together so easily and you have all the ingredients on hand? Great recipe - thanks for sharng!

      Definitely a stick to the list kind of gal at the grocery store. Now if I could just get that list fine-tuned so that I don't forget to put anything I need on it. 🙂 I also cannot get into doing that on my phone, I NEED paper and pen for some reason to think properly about that list. I do arrange by aisle. It's fun to read how others do it! This recipe looks wonderful.

      Beautiful photographs, Pam--and the salad sounds (and looks) fresh and appealing, just what I need after my cake-fest.
      As for my grocery shopping style, I make a list (organized with the grocery's layout in mind), but I allow for excursions to the floral department. I try to skip the inner aisles, except to buy K-cups and staples, and shop in the outer perimeter--all the fresh stuff. I read somewhere that this approach is healthier. I'm not thinner, but I do have less junk food in the pantry. When I don't want to leave the Yorkies to shop, Bandwidth goes shopping and he HATES my lists. He is a minimalist to the core. However, if he has a question, such as a flower I've insisted that he buy, he will text a photo and wait for a yay/nay. 🙂

      I must say, that is one nice looking salad! I'm a stick to the list kinda shopper also. Like you, I will only deviate if there is some in the produce aisle that is on sale and looks extra special.

      A long time ago I got use to shopping the perimeter of the grocery store and through the years, I have pretty much stuck to my guns about that too.

      Your salad looks refreshing enough to entice the taste of Spring and hearty enough to satisfy the belly. Thank you so much for sharing Pam.

      I'm normally a total stick to the list kind of gal, but sometimes produce can definitely inspire me to veer off track! Love this salad...mangoes are my favorite!
