I don’t know about you, but when I go meatless, it’s almost always with pasta. Pasta gives a feeling of substance to almost any dish. Also when going meatless, I need a little fat – usually in the form of cheese, but olives do quite nicely too. This dish, Roasted Cauliflower Pasta uses a bit of cheese and some green olives to add a bit of tang and satisfaction.
This was really good, even Mr. Sidewalk Shoes didn’t miss the meat. The cauliflower becomes almost nutlike during the roasting and the olives add just the right amount of tart. The cheese mellows it a bit and the parsley adds a fresh brightness. Really easy, and really good.

I have no doubt that I would enjoy this pasta dish. Roasting vegetables definitely brings out the natural sugars. I agree with you I can go meatless easily with pasta.
