Tender juicy chicken, vegetables, and noodles all cooked on the Blackstone griddle with a delicious soy garlic butter sauce! No need to go out to eat when you can make it even better at home!

Hibachi chicken with noodles in a white bowl.

I have declared this the summer of my Blackstone griddle, but really I'll be busy griddling, smoking, and grilling all summer!

This hibachi chicken with noodles is so good, after we finished it all, I began wondering how soon could we have it again!

I had high hopes for it and it totally delivered. It is better than the hibachi we get a local restaurant.

This is going into regular rotation at our house!

    Ingredients.

    Soy Garlic Butter Sauce.

    • Butter, salt, and pepper. I like to use Kerrygold buttr because it comes from grass-fed cows, but use whatever butter you have!
    • Garlic and ginger - you can either use fresh or those tubes that you can find in the produce section. They make everything so easy!
    • Toasted sesame oil - adds so much flavor.
    • Soy Sauce - I used low sodium.

    Hibachi.

    • Chicken - I used boneless, skinless chicken thighs. They don't dry out like chicken breast can, but you can also use chicken breast.
    • Vegetables - I used zucchini and onion.
    • Yum Yum Sauce - optional. I used store-bought because I haven't perfected my recipe yet!
    • Noodles - traditional hibachi is made with Yakisoba noodles, but I usually use whatever past I have - linguine, ramen, spaghetti, or udon. This time I used bucatini noodles, which are a heavier noodle.

    Instructions.

Two photos showing soy garlic sauce being made and zucchini and onions chopped.

Cook noodles according to package directions. Drain and rinse in a colander. You can drizzle with a little sesame oil or other oil and toss a bit to keep them from clumping together.

Prepare the soy garlic butter sauce by combining the soy sauce, softened butter, minced garlic, sesame oil, salt, pepper, and ginger (I used ginger paste.)

Cut the zucchini and onions into 2 inch pieces and cut the chicken into bite-sized pieces.

Preheat the griddle to 375°f - which on my griddle is medium. One side of the griddle I preheat on low. So I have two hot zones and one cooler zone.

Gather all your ingredients and you are ready to go!

Add a little oil to the hot side and add the chicken. Sprinkle with salt and pepper. Let it cook undisturbed for a few minutes to get some browning.

Add oil to the center of the griddle and spread out the vegetables. Sprinkle with salt and pepper and drizzle with a little sesame oil.

Keep cooking and stirring until the chicken is done and the vegetables are still crisp tender. About 3-4 minutes.

Add a little oil to the cooler part of the griddle and spread out the noodles. Toss the noodles to warm them back up.

Add about a tablespoon of the soy garlic butter to the noodles and then stir around to coat.

Using your spatula, bring everything together combining the chicken, vegetables, and noodles. Add the rest of the soy garlic butter and stir to coat.

Cook for a minute or two to slightly thicken the sauce and get everything coated.

This was so good! No more takeout or fancy hibachi restaurants for us! The soy garlic butter sauce really makes it special. I'm going to work on perfecting a yum yum sauce and get that posted as soon as I do!

You could make this with rice and have hibachi chicken with rice. I'll probably try that next!

    Ingredients

    Soy Garlic Butter Sauce

    • 3 tablespoons soy sauce
    • 2 tablespoons butter softened
    • 1 tablespoon garlic minced
    • 1 teaspoon toasted sesame oil
    • 1 teaspoon fresh ginger grated
    • ½ teaspoon kosher salt
    • ½ teaspoon black pepper

    Hibachi

    • 1 ½ pounds chicken thighs boneless, skinless, but into 1 inch cubes
    • 2 zucchini cut into 2 inch pieces
    • 1 onion cut into 2-inch pieces
    • ½ pound noodles hibachi, udon, ramen, spaghetti, whatever
    • avocado oil
    • toasted sesame oil
    • Yum Yum Sauce

    Instructions

    • Cook noodles according to package instructions leaving them just barely cooked. They will continue cooking in the heat of the griddle. Drain, rinse, and spray with a little oil to keep them from clumping together.
    • Combine all the ingredients for the soy garlic butter sauce in a small bowl.
    • Preheat the griddle to medium. If you have multiple zones, do one side and the middle at medium and one at low. You want a temp around 375°f.
    • When the griddle is hot, add some oil to one side and add the chicken. Season with salt and pepper. Let the chicken cook undisturbed for a couple of minutes.
    • While the chicken is cooking, add oil to the middle of the griddle and add the vegetables. Sprinkle with salt and pepper and drizzle with a little sesame oil.
    • Flip the chicken and continue cooking the chicken and vegetables until the chicken is cooked through and the vegetables reach the desired color. About 3 more minutes.
    • Add oil to the cooler part of the griddle and add the noodles. Add about a tablespoon of the soy butter sauce and toss to coat. When the noodles have warmed up a bit, combine the chicken and the vegetables and the noodles together. Add the rest of sauce and cook for a minute or two until thickened.
    • Serve with yum yum sauce if desired.

    Notes

You can use boneless, skinless chicken breasts, I prefer the flavor of thighs.
