    This Thyme Simple Syrup is so easy and delicious!  It can be used in cocktails, teas, or even desserts.  You're going to love the herby sweet syrup!

    Who can resist the cookbooks at Anthropologie?  Anyone?  Or is it just me, that walks out after every single visit with a new cookbook or two?  I don’t know who it is that chooses their cookbooks, but we are on the same wavelength.  I want every single one in the store.  Sometimes it’s fun to walk through and see how many I have.  Mr. Sidewalk Shoes doesn’t find that so amusing, but I do.

    My latest find was Wild Cocktails from the Midnight Apothecary: 100 Recipes Using Home-grown and Foraged Fruits, Herbs, and Edible Flowers.  I know.  I already have a zillion cocktail books, but I loved the premise of this one.  The promise of unusual herby cocktails.

    She uses the Thyme Simple Syrup in a couple of cocktails. Making flavored simple syrups is so easy and the possibilities are endless.  You can use this in cocktails as a sweetener in tea or lemonade or it can even find it’s way into your cooking.  Imagine this drizzled over a lemon pound cake!

    After browsing on Amazon, it turns out there are several wild type cocktails books!  I put these on my wish list:  The Wildcrafted Cocktail, Wild Drinks & Cocktails and Forager's Cocktails.

    Thyme Simple Syrup

    Infusing simple syrup with thyme is so easy and it really kicks up your cocktail game!  Can also be used in tea or even in cooking!

    Prep Time 15 minutes minutes
    Cook Time 5 minutes minutes
    Total Time 20 minutes minutes
    Servings 8
    Calories 97kcal

    Ingredients

    • 1 cup sugar superfine
    • 1 cup water
    • 4 thyme sprigs

    Instructions

    • Stir the water and sugar together in a non reactive pan over low heat until the sugar dissolves. Let simmer for about 2 minutes. Rub the thyme leaves between your hands as you drop them into the water/sugar mixture. Remove from heat and let steep for 10 minutes
    • Strain through a fine sieve to remove the thyme leaves into a sterilized jar. Store in the fridge for up to 2 weeks.
