    Easy Breakfast Pita

    You can make this easy pita anytime, but with a fried egg on top, it makes a delicious quick and easy breakfast!

    If you are looking for a quick and easy, yet utterly delicious breakfast, then say hello to the crispy breakfast pita!

    A crispy pita topped with mascarpone cheese, prosciutto, arugula (or baby spinach), a little lemon juice and zest for a pop of flavor, and your favorite fried egg.

    Ingredients.

    • Pita breads - you can use white, whole wheat, or gluten free. This also works with naan breads.
    • Eggs.
    • Mascarpone cheese - if you can't find mascarpone cheese, you can substitute cream cheese, ricotta cheese, or Greek yogurt.
    • Lemon - you'll need the zest and the juice, so try and find organic if you can.
    • Baby spinach or arugula - you could also use baby kale or microgreens.
    • Prosciutto - You can substitute bacon, thin sliced ham, or pancetta.

    This is so good! You will turn to this easy breakfast recipe time and time again.

    Just because it has an egg on it, doesn't mean it's just for breakfast though! This makes a fantastic lunch or light dinner!

    You'll probably do what I did, which is once I bought all the ingredients, I had it for lunch one day, breakfast the next, and then lunch again on the third day. It's that good!

    Easy Breakfast Pita

    A crispy pita, mascarpone cheese, arugula or baby spinach, and a fried egg make this easy and delicious breakfast, lunch, or dinner pita!

    Ingredients

    • 6 large eggs
    • 4 tablespoons extra virgin olive oil plus more for brushing pita
    • 6 pita breads 6-inch
    • 6 ounces mascarpone cheese
    • salt and pepper
    • 1 lemon zest and juice needed
    • 3 cups baby arugula or baby spinach
    • 8 ounces proscuitto thinly sliced

    Instructions

    • Heat a grill pan (or just use the skillet you'll be frying the egg in) over medium high heat. Brush the pita with some olive oil and cook for 2 to 3 minutes each side until browning and as crispy as you like. Remove and let cool slightly.
    • Combine the cheese with the zest from half the lemon, ½ teaspoon salt, and ½ teaspoon pepper in a small bowl.
    • In a bowl, whisk together 3 tablespoons olive oil, the juice from the lemon (3 tablespoons), 1 teaspoon salt, and ½ teaspoon pepper, until smooth. Add the arugula and toss to coat.
    • Heat 1 tablespoon of the oil, in a large skillet over medium-high heat. Crack the eggs into the pan and cook until your desired level of doneness. 2-3 minutes to get the whites to set, but leaves the yolk runny.
    • Spread each pita with 2 tablespoons of the mascarpone lemon mixture. Divide the prosciutto evenly and then divide the arugula and mound it on top of the prosciutto. Top with the fried egg and sprinkle with salt and pepper.

    Notes

    You can substitute  bacon, pancetta, or thin sliced ham for the prosciutto.
    You can substitute cream cheese, Greek yogurt, or ricotta cheese for the mascarpone.
    Greens - baby kale, baby spinach, baby arugula, or microgreens all work.

      Oh yeah, anything with a fried egg on top is an A+ in my book. I've done versions of this and they're always good. My hubby is having minor surgery next week, so easy meals are going to be a necessity for awhile. This one fits the bill! Thanks!

      Uh oh. Looks like someone owes you a trip to Seattle (make it in June cause I'll be there!) This is the perfect meal for one. It is definitely one of those recipes you want to keep in rotation and have over and over again. Yum!

      I hardly ever take even a minute to make myself breakfast unless it's for a shoot and then I eat it cold. Pitiful. This sounds really REALLY good.

      Gosh darn it, the Mister's got some serious making up to do...I mean, he could have brought you back a cookbook like my Big Guy does whenever he travels (rub it in!!!). Anyway, we'll soon be close enough to Seattle you can come visit for yourself. That'll teach him.
