    Beet and Orange Salad with Citrus-Cumin Vinaigrette

    I don’t know about you, but I chose my vacation locations based on whether or not they have an Anthropologie store.  I could spend hours just perusing their kitchenware and their books.  All of their books, but mainly their cookbooks.  The Nashville store is where I found, Fresh Happy Tasty: An Adventure in 100 Recipes definitely the best name for a cookbook ever.

    Now, in the book the salad is shown with golden beets and blood oranges, which makes for a way more attractive salad.  First of all I had purple beets, which lovingly spread their purpleness to my hands, face and all over the oranges.  I was also supposed to julienne the beets, but my new fancy mandoline hadn’t arrived in the mail yet, so I used the shredder dish from my food processor.  So, even with all these caveats that I have thrown at this recipe, it was still wonderful.  A fresh, tasty, happy salad.

    Beet and Orange Salad with Citrus-Cumin Vinaigrette

    This Beet and Orange Salad with Citrus-Cumin Vinaigrette is so bright and colorful and good for you! 
    Course Side Dish
    Servings 4
    Calories 120kcal

    Ingredients

    Dressing

    • ¼ cup orange juice
    • 1 tablespoon lemon juice fresh
    • 2 tablespoons olive oil extra virgin
    • 1 teaspoon ground cumin
    • kosher salt
    • fresh ground black pepper

    Salad

    • 2 beets peeled, and julienned
    • 2 oranges peeled and sliced
    • 1 cup cilantro leaves

    Instructions

    • Whisk the dressing ingredients together in a large bowl.  Add the beets, oranges and cilantro.  Toss.  Season with salt and pepper to taste.

      HA. When Paul and I higher a babysitter, it's usually to go to the bookstore. Not a movie or dinner. Nope. The bookstore. I can sit in the cookbook section for 3 hours, uninterrupted. Bliss. I love Anthropologie, although usually throw their catalogs out immediately because I can't afford anything in them!

      Wow! Pam that is one colorful salad! I think it came out just beautiful and yes, Happy too:)

      I never think to blend both oranges and beets. I can just imagine how refreshing this salad is. The vinaigrette lifts it to healthy goodness!
