    Boozy Bourbon Chocolate Popsicles

    Rich and creamy with lots of chocolate and bourbon flavor, these Boozy Bourbon Cocoa Pops are great for Father's Day or anytime you want a sweet adult frozen treat!  The classic pairing of bourbon and chocolate makes a boozy popsicle that are perfect for picnics, cookouts or sitting by the pool. They are naturally sweetened with dates and dairy free!

    Boozy Popsicles

    Ahh... boozy popsicles.  I love them.  You might remember that a couple of weeks ago, I posted these Pina Colada Popsicles.  They were amazing and if you haven't made them yet, you must!    

    I love getting my cocktails frozen on a stick. Just like meat and chicken always seems to taste better on a stick, so do cocktails.    I love boozy popsicles so much, that I actually did a round up of them with not only my popsicles, but other food bloggers as well, my 15 Boozy Popsicles to Make Right Now is one of my most popular posts on the blog!

    How to Make Boozy Popsicles

    Making these delicious chocolate popsicles is so easy.  You just place the ingredients - dates, dried cherries, cocoa powder and coconut milk in a blender and blend until smooth.  Then add a cup of ice and blend again.  Pour into your favorite ice cream molds and freeze for at least 4 hours.

    The bourbon keeps them from freezing really hard and gives them a great texture. 

    You can sub your favorite whiskey for the bourbon. If you're curious, read about What is the Difference Between Scotch, Whiskey and Bourbon.  I just got back from doing the Kentucky Bourbon Trail and I am all about bourbons right now!

    Bourbon Chocolate Popsicles

    Oh my peeps, these are so good and so easy. These would be perfect for Father's Day!  These are rich and chocolatey and actually kind of good for you. They are sweetened with dates, get a bit of tartness from dried cherries, antioxidants from cocoa powder (I use organic Raw Cocoa Powder) creaminess from coconut milk, and a warm grown-up flavor from the bourbon.

    Really, I can't insist enough that you make these. They are that yummy. I pretty much always have the ingredients in my pantry, so these are going to go in regular rotation at our house!! My only question with the recipe - found in my favorite cocktail book Zen and Tonic - was that after blending all the ingredients, she states to add ice and blend again. There is no mention of how much ice. I added about a cup. The recipe says that it makes 8 pops, but I got six.

    Boozy Bourbon Cocoa Pops

    These Boozy Bourbon Chocolate Popsicles are a delicious summer adult treat!  Rich and creamy with the classic pairing of bourbon and chocolate!

    Ingredients

    • 4 Medjool dates pitted
    • ¼ cup dried cherries unsweetened
    • 2 tablespoons cocoa powder
    • 1 cup coconut milk
    • 4 ounces bourbon

    Instructions

    • Place the dates, cherries, cocoa powder and coconut milk in a blender and process until creamy. Add about a cup of ice and blend again. Add the bourbon. Pour into popsicle molds and freeze for a minimum of 4 hours.

    Notes

    You can substitute your favorite whiskey for the bourbon if you'd like.

      We have a chocolate bar (candy bar?) here called a Cherry Ripe. Chocolate, coconut and cherries. We call popsicles, ice creams if milk based and ice blocks if water or fruit based. The English call them lollies. Lollies for us are what the English sweets. I think they are called candies State-side. Confused yet? Don't get me started on dessert and pudding.
