Add a soft floral flavor and a pretty color to your cocktails and mocktails with this Pansy Simple Syrup.

I used pansies for this flower simple syrup, but you could use other edible flowers. The syrup's color will depend on the color of your petals!

Not only is this great for cocktails, mocktails and other beverages, but it's lovely drizzled on fresh fruit or baked desserts!

I am a huge fan of simple syrups. I love them. Well, really I love infusions and simple syrups are one of my favorite infusions to make.

You can instantly change the whole feel of a cocktail with a flavored simple syrup. They are also lovely stirred into teas and drizzled over yogurt or pound cakes.

So, when I won some edible flowers from Gourmet Sweet Botanicals, the first thing I made was Hibiscus Vodka. The next thing I made was this pansy simple syrup.

Easy to make, with a soft floral flavor and a lovely color!

A cup of sugar and a some pansy flowers.

    Ingredients:

Sugar - white granulated sugar is fine here.

Pansy flowers - stick with one color of petal so that that the color of your syrup doesn't get muddled. Also, do not include the green base of the flowers or your syrup will turn green (lesson learned!) Tear off the petals and use only the petals.

    Instructions:

Place the pansy petals and the sugar in a food processor and pulse until well combined.

Note - this sugar was so pretty! I think it would be lovely as a rim for a cocktail or sprinkled on baked goods.

Add the sugar/petal mixture to a pan along with 1 cup of water. Stir over medium heat until the sugar dissolves. There will be bits of petal.

Photo collage showing syrup being strained and then poured into a bottle.

Pour the liquid through a fine mesh strainer.

Let cool to room temperature and then pour into a lidded bottle.

This will keep in the fridge for about a month. Some say that you can keep it for 3 to 4 months, but I like to use it up within a month.

Bottle of pansy simple syrup with some pansy blossoms.

We loved this easy simple syrup! Such a pretty color and such a lovely soft floral flavor. It's like candied flowers in liquid form.

How to use pansy simple syrup:

    • Drizzle on poundcake, custards or yogurt.
    • Cocktails - like a Pansy Martini.
    • Drizzle on fruit salad.
    • Mocktails
