I go to the grocery store with a weekly menu planned out and a list made for only the items I need to make my menu. I rarely stray from my list (unless my husband is with me, and then all bets are off – he is as bad as having a 4 year old along). But last week there was a table of fresh pineapple. They beckoned to me with promises of Hawaii memories, or they would if I had in Hawaii memories, but alas all I have are Hawaii fantasies. Their siren song was strong and I succumbed.
But as I said before, I had a menu planned out. Nowhere in my menu did it mention pineapple. I am totally boring and rarely stray from my given path, so even though I found recipes using pineapple salsa for this and that, I needed to add pineapple to the menu without changing the menu.
So I simply cut it up, spread it on a baking sheet, sprinkled it with a little brown sugar, and roasted it at 400 till it had slightly caramelized, artfully piled it on a plate, told it to say “cheese”, snapped it’s pic, and ate it for dessert. Yum.

Roasted pineapple would be so versatile. I bet it is great with just a spoon but I can also imagine it on a piece of angel food cake. Yum!

It's the other way around in this house, he sticks to the menu and I'm the 4 year old. I've never roasted, looks wonderful!

Giving it a quick coating of coconut oil is a fav in our house. But the brown sugar. . .can't be beat!

Isn't it funny how men grocery shop? My husband doesn't shop at all! So good of you to stick to a list..."note to self" make a list! The pineapple looks lovely, yum!

What a yummy idea! I love barbecued peaches and pears ~ ever had? Cooked fruit doesn't appeal to some people but it sure appeals to me!!

I think you did the pineapple proud. Love it roasted or grilled! Incidentally, you have company in the menu planning/grocery shopping department except it's Big Guy who keeps me in line (never mind a very strict budget). LOL

My grocery shopping routine is exactly the same as yours, right down to the impulsiveness of my tag-along husband. The checker is probably used to me saying, "How did that get in our cart?! Who put those Twinkies in there?" 😉
Pineapple sounds lovely and refreshing right now, says she who is already tired of the heat & humidity and it's only the 4th of May. Sigh.

The only time I stray from my menu is when it comes to fruit! Pineapple is always a favorite. I've never roasted it before but I want some Hawaiian fantasies also. Time to get on that.

Pineapple is like a 3rd child in my house during the summer months. I grill it with a little brown sugar (or cinnamon) and serve it with ice cream. Mama!

Try grilling the pineapple, too. I sprinkle it with a bit of chili powder, so I don't add sugar, and toss it on the grill. Oh, so good.
