    Ginger Almond Biscotti

Mr. Sidewalk Shoes is a dessert kind of guy.  He always likes to have a little something sweet after dinner.  It doesn’t have to be much, no big production, but he does like something.  While I am also extremely fond of a dessert every day, my calorie tracking on My Fitness Pal, isn’t too keen on it.

Click here to pin this Ginger Almond Biscotti.

    Ginger Almond Biscotti

I've found that biscotti is a dessert that can make us all happy, including my Fitbit.    A lot of biscotti recipes can be fairly low calorie with no butter or cream, like this one that I found in Donna Hay Magazine issue #48.

Biscotti makes the perfect after dinner dessert.  It’s small so there is good portion control, it’s light, and it goes wonderfully with a cup of coffee.  This particular biscotti is wonderful, I love heat from the candied ginger.  The only thing I changed is that I used sliced almonds instead of whole, because I find it makes the biscotti easier to slice.

    Ginger Almond Biscotti

Dried ginger and candied ginger bring a bright flavor to this Ginger Almond Biscotti
    Prep Time 25 minutes minutes
    Cook Time 30 minutes minutes
    Total Time 55 minutes minutes
    Servings 40
    Calories 83kcal

    Ingredients

    • 2 cups all-purpose flour sifted
    • 1 ½ teaspoon baking powder sifted
    • 2 teaspoons ground ginger sifted
    • ¾ cup caster sugar superfine
    • 3 eggs lightly beaten
    • 2 teaspoons vanilla extract
    • ⅔ cup whole almonds blanched
    • ½ cup candied ginger chopped

    Instructions

    • Preheat the oven to 320.
    •  Place the flour, baking powder, ginger and sugar in a bowl and mix to combine.  Add the eggs and vanilla and mix until a dough forms.  Add the almonds and ginger and mix to combine.  Place the dough on a lightly floured surface and knead until smooth.  (It can be quite crumbly, just keep mushing it together till it sticks together.)
    • Halve and roll into 2x10in long logs and flatten slightly.  Placed on a lightly greased baking tray (leave a couple of inches between them.  Bake for 30-35 minutes.
    • Allow to cool completely (personally I find I get more crumbles if I let them cool too long, I usually let them cool for 10 minutes).  Use a serrated knife to cut the logs into 3mm-thick slices, place on baking tray lined with parchment paper (I just place back on the same cookie sheet).  Bake for 8-10 minutes.
    • Allow to cool on tray.

I actually made biscotti for the first time ever, and gave it for Xmas gifts, after I saw your Cranberry & Pistachio Biscotti post. That was such a great combo, and they were so popular, I don't need any encouragement to try these ones.

i think i might start making biscotti all the time--it seems like a really simple and versatile thing to create and my coffee has been boring to me lately. 🙂

You could make this even more calorie counter app friendly by using egg beaters instead of eggs. It does look like a great recipe!

I really should make biscotti to have as a light after dinner treat because I'm always craving something sweet also! Love the ginger in this. Not traditional, but still delicious.
