Heirloom Tomato, Harissa and Green Olive Bruschetta
Is there anything more wonderful than heirloom tomatoes at the peak of summer? It is one of my favorite joys of summer. My CSA never disappoints when it comes to gorgeous tomatoes. I think I mentioned that my husband went out of town for a band reunion last weekend. I needed to find something to make for me to eat, that was single serving. I discovered one of my most favorite meals, Crispy Breakfast Pita, on one of his other trips, so I had set the bar pretty high.
I didn't go searching for heirloom tomato bruschetta recipes exactly, but headed straight for Donna Hay magazine on my iPad. In her Feb-March 2015, I found this dream of a recipe. I had everything I needed to make it and since I've been on a Harissa kick lately, it sounded perfect.
Oh my gosh. This was amazing. So simple and yet so flavorful. I had it for lunch and then because I had enough of the green olive topping left over, I had it again at dinner with my chicken. I always hope to take away a new idea from a recipe and this one did not disappoint! For the bread you combine Harissa paste with oil, brush it on some bread and grill bread - I am going to use this technique again and again! Harissa grilled bread is my new favorite thing!
Heirloom Tomato, Harissa and Green Olive Bruschetta
Ingredients
- ⅓ cup pitted green Sicilian olives, chopped
- ⅓ cup flat-leaf parsley chopped
- 1 tablespoon toasted pine nuts chopped
- 1 tablespoon lemon juice
- salt and fresh ground black pepper
- 1 teaspoon Harissa paste
- 2 tablespoons extra virgin olive oil
- 4 slices sourdogh bread
- 9 ounces mixed heirloom tomatoes sliced
- baby mint leaves to serve
Instructions
- Combine the olives, parsley, pine nuts, lemon juice and salt and pepper in a medium bowl. Set aside.
- Preheat a grill pan or the grill to medium-high heat. Mix the Harissa paste and the olive oil in a small bowl. Brush both sides of the bread lightly with the mixture. Grill the bread for about 1-2 minutes each side. Add the remaining Harissa and oil mixture to the olive mixture and stir to combine.
- Top each slice of bread with the sliced heirloom tomatoes. Spoon over the olive mixture and top with the mint leaves. Makes 4.

I think that your bruschettas are going to be a little spicy cause of harissa paste, but at the same time balance with mint's cool aftertaste.
