    Mango Salad with Mint

    This Mango Salad with Mint is so easy and so delicious!  With only 3 ingredients, it comes together in minutes and is so refreshing.  Mangoes, mint, and limes are all you need to make this easy side dish salad!

    What Goes with Mango?

    Whenever a store has mangoes on sale, I snap them up.  I hate that I went through most of my life never knowing what a mango tasted like.  I grew up when there were 3 television channels and our big excursions into food from other cultures was the Chef Boyardee Chow Mein. 

    Now, there is cilantro, mangoes, harissa paste, lemongrass....and so much more.  Things I never even knew existed. 

    Anyway back to my haul of mangoes.  I was trying to decide what to do with them, when I turned to the books that I turn to every time I'm looking for ideas:  The Flavor Bible and The Vegetarian Flavor Bible.   These books are not recipe books, rather they tell you what goes with what. 

    Glancing through the section on mangoes, I saw that mangoes go with beans, chiles, cilantro, coconut, ginger, lime, mint, onions, papayas and more, but I zeroed in on lime and mint.  I had limes in my fridge and mint in my garden, so it was an easy choice.

    How to Make this Mango Salad.

    Are you ready to learn how to make the easiest salad ever?! 

    All you need is:  a mango, mint and a lime.  Seriously. 

    Peel the mango and dice it into bite sized pieces and put in a bowl.  Finely chop about a tablespoon of mint and add to the mango.   Squeeze the juice of one lime over the mango and mint.  Toss to combine. 

    That's it.  

    You've just made a tasty, crazy easy, mango salad.

    What to Serve with Mango Salad.

    At first I wasn't going to post this salad.  I mean it has only 3 ingredients.   You know though that I am all about simple, especially when the flavors shine. 

    I am always looking for a salad to go with Southeast Asian cuisines and this one is perfect.  It would be so good with Slow Cooker Thai Curried Noodles, Spicy Thai Pork Fried Rice or Thai Beef Cabbage Wraps.

    Ingredients

    • 1 mango
    • 1 lime juiced
    • 1 tbsp mint finely minced

    Instructions

    • Peel the mango and dice it into bite sized pieces.
    • Squeeze the juice of one lime over the mango.
    • Sprinkle with the mint and toss to combine.

    Notes

    Lime - fresh squeezed is best.  Save the zest and store in the freezer for recipes that call for zest, before you squeeze the lime.

      Absolutely amazing and simple! My two year old wouldn't stop eating out of the bowl as I was trying to mix it all. I used crushed mint that I have on my seasoning rack. Definitely going to opt in for fresh mint next time. This is going to be a favorite go to from now on. We're having it with Vietnamese pork bowls tonight for dinner.

      Yum! So delicious, simple and refreshing! Whenever I'm at the store and I see mangos on sale I snap them up too! My kids love mango, and this salad makes them an extra special treat.
