    Spatchcocked Chicken

    It’s summertime and you know what that means!!!!  Yep.  Spatchcocked chicken time.  If you are new to my blog, you may not be aware of my long standing love affair with spatchcocked chicken.  Go up to the little search thing up top and type in spatchcocked chicken and get ready to feel the love.

    Every Sunday in the summer, I have one or two of these babies going on my grill.  This, my dear friends, was the first one of the season.  This and a glass of Sauvignon Blanc and I know summer has arrived.

    Now, go out and throw one of these on the grill and feel the spatchcocked chicken love.  You know you want some.

      Oh, I was planning to make this last summer and misplaced your directions. Hopefully, I'll be able to backtrack this year and find them.

      OH, man, I love spatchcocked chicken! It's perfect for the outdoor grill (if I had one), but also for the oven grill. This one looks perfect to herald the coming of summer. I'm wondering if my mojo will stretch to grilling chicken...

      Ah, the best way EVER to cook a chicken. I love smoking and grilling them this way. I've even skillet roasted one in the oven like that.

      Oh my gosh! I LOVE me some spatchcocked chicken and I LOVE saying spatchcocked too!

      I learned it from you and now I see that style of preparing a chicken EVERYWHERE!

      I love, love, love cooking chicken this way. This is now my favorite way to cook my Thanksgiving turkey as well! Talk about a time saver!

      I spatchcock my chickens to roast in the oven. The flavor can't be beat, and neither can the increased speed in roasting those suckers!

      In reading and watching food shows, it appears the pros believe spatchcocking is the definite preferred cooking method and I agree. I either spatchcock or beer can if I'm cooking a whole chicken. Yours looks real goog.

      Yes---I remember your posts about Spatchcocked Chicken, and I think I could smell your grill when you were cooking them... ha ha...
